Thermomix Cooking live at www.onfm.me

On 2nd and 9th of August 2016, I was delighted to be invited by ONFM to be cooking live on their Tuesday program 4点到6点 《生活便利Dimz》by VJ Angelyn李飔妏 and VJ Monsterz李永升, with topic
如何吃着好康,变得健康? / how to eat healthier and therefore I am there sharing a few healthy recipes.

It was my first time sharing in complete Cantonese program where normally I would conduct my cooking session in English. Thanks to the 2 happy, lovely and fully energised VJs, I got into their wavelength too. Too bad I didn't record the whole clip thinking the show will be posted up as a whole. The first day was quite a whole program but the second was only 7 minutes.. Sigh.. Nevertheless, thanking Han the producer and also Jason from marketing for this exposure. You guys are sure fun to be with.

Thermomix Oyster Mee Sua / Oh Ah Mee Sua / 蚵仔面线 / Mee Sua Tiram

Taiwan famous cuisine. I keep thinking of Shih Lin market now. The authentic Oyster Wheat Vermicelli is made with bonito flakes but it's too expensive to get a bag of 500g of bonito flakes for this, it's about RM85 for a bag I think, or if can get small packaging, it was about RM5 for 20g if you are lucky. That's for the broth cooking. I have tested a few times, this is the best. You may wanna reduce the black vinegar if you don't like too sourish. Add on chili oil would definitely give you the kick! If you are using red mee sua, the time may need to be more. Do adjust accordingly.

Edited (12th June 2016) for some confusion from yesterday's cooking class. The recipe provided is not mine, as that was from Taiwanese blog and I have edited to below's recipe for clearer instruction. As for questions on whether if we can replace oyster with something else, well, the sampling for everyone was without oyster, so for sure you can add on any toppings to your liking but that wouldn't be called Oyster Mee Sua, just Mee Sua soup :)

Below is my version of Oyster Mee Sua.

Ingredients:
2 stalks Spring Onion
20g Ginger
20g Fried Shallots
20g Bonito Flakes (optional)
1200g Hot Water
150g Oysters Meat (coat evenly with 2 tbsp Tapioca Starch)
2 tbsp Shallots Oil
200g Mee Sua (Wheat Vermicelli) - about 5-6 small bundles (any additional, need to adjust the rest of ingredients, otherwise not enough of soup)
3 tbsp* Tapioca Starch (mix with 80g Water)
20g-30g Black Vinegar
1/2-1 tsp White Pepper

Seasoning:
30g Soy Sauce
15g Dark Soy Sauce
1 tbsp Sugar
1 tsp Salt
1 tsp TM Chicken Stock
1/4 to 1/3 tsp Five Spice Powder (optional)

Garnish:
10g Fried Shallots
2 sprigs Coriander Leaves (chopped)

Method:
1. Put spring onion, ginger and fried shallots (and bonito flakes if using) into TM bowl. Chop [Turbo / 2 seconds] x 2
2. Add water and simmering basket into TM bowl and cook [12 minutes / 100°C / Speed 2]
3. Add starch coated oyster simmering basket and cook [40 seconds / 100°C / Speed 2.5]. Remove blanched oysters and set aside, cover with shallots oil.
4. Add mee sua (without simmering basket) and seasonings, continue cook [5 minutes / 100°C / Speed 2.5].
5. Add starch mix at final 2 minutes, black vinegar and pepper at final 1 minute.
6. Serve vermicelli into bowl, pour soup, top up with oysters and garnish. Serve hot.

材料:
2 条青葱
20g 姜
20g 炸葱
20g 柴鱼片(可选的)
1200g 水
150g 蚵仔 (均沾上2湯匙木薯粉)
2 湯匙 葱油
200g 面线
3湯匙* 木薯粉 (加80g水混合均勻)
20g-30g 乌醋
1/2-1茶匙 胡椒粉

调味料:
30g 酱油
1湯匙 黑酱油
1湯匙 糖
1茶匙 盐
1茶匙 TM 鸡精粉
1/4-1/3茶匙 五香粉 (可选的)

装饰:
10g 炸葱
2 条香菜 (切碎)

作法:
1. 将青葱, 姜和炸葱放入主​​锅,切 [Turbo / 2秒] x 2
2. 把水和网锅放入主​​锅煮 [12分钟 / 100°C / 速度2]
3. 将蚵仔沾木薯粉放入网锅煮 [40秒 / 100°C / 速度2.5]. 把蚵仔捞出后加葱油拌匀,备用。
4. 无网锅,放入红面线和调味料继续煮 [5分钟 / 100°C / 速度2.5]。
5. 在最后2分钟将调好的木薯粉水,最后1分钟加入乌醋和胡椒粉。
6. 面线装入碗中,放上蚵仔,依个人喜好加入香菜和炸葱。趁热食用。

Thermomix Mee Siam / Spicy Vermicelli / 暹罗炒米粉 (娘惹)

Recipe adapted from RasaMalaysia, thanks Bee ;)

Spice Paste:
4 dried red chilies (soaked & rinsed) - fresh one can be used too
5 shallots (peeled)
5 garlic (peeled)
40g taucheo (fermented yellow bean sauce)
80g cooking oil

Ingredients A:
1/2 tsp sugar
1 tsp Salt to taste
30g Soy Sauce
400g water

Ingredients B:
400g vermicelli (mee hoon) - start soak and rinse only when you start cooking
100g fish cakes (sliced)
200g bean sprouts

Garnish:
2 eggs (lightly beaten, seasoned with a pinch of salt)
2 stalks scallions (chopped into 1/2-inch length)
3-4 limes (cut into wedges)
1-2tbsp Fried shallots


1.  Put Spice Paste Ingredients into TM bowl to chop.
     将材料Spice Paste放入主锅切。
     [MC / 15 secs / Speed 8-10] x2

2.  Add in Ingredients A into TM bowl to cook.
     加入材料A煮。
     [MC / 5 mins / Varoma / Speed Reverse 0.5]

3.  Add in Ingredients B, mee hoon first then fishcake and bean sprout to cook.
     把米粉放进TM主锅,然后加入鱼饼和豆芽煮
     [MC / 4 mins / Varoma / Speed Reverse Spoon ]

4.  Garnish with fried shallot, fried eggs strips, spring onion and limes
     装饰:炒香葱和吉子

Thermomix White Sandwich Bread - tangzhong water roux method

Water Roux Tangzhong bread, soft and fluffy.
(recipe adapted from journalofafrenchfoodie.com)

Ingredients

Tangzhong:
15g bread flour
45g water
40g milk

Dough:
Ingredients A:
**tangzhong (let it cool down to 37'C)
40g sugar
1 egg (~50g)
110g fresh milk
1tsp dried instant yeast

Ingredients B:
350g high protein flour (bread flour)
1.5 tsp salt

Ingredients C:
30g butter


Thermomix method:
1. Prepare Tangzhong. Place water, milk and flour into TM bowl and cook 3 minutes / 70°C / Speed 3. Once done, spin 10 seconds /Speed 6. Open lid, remove from Thermomix housing and let cool for about 10 minutes. (I expedite by wiping side of bowl with tap water...)

2. Add ingredients A and mix 1 minute 30 seconds / 37°C / Speed 3.

3. Add in ingredients B and knead 6 minutes at Dough mode (Knead/ Dough / Wheat button)
*TM5 - press bottom 3rd button which shows a small box, choose dough, turn dial knob to start.
*TM31 - turn dial to lid locked position and press 'Wheat button on second right)

3. Add in ingredients C and continue to knead another 3 minutes.

Remove dough with the spatula and cover with ThermoMat or any baking mat. Or in any oiled bowl cover with tea cloth or cling wrap/ cling film until doubled in size, sometimes even in enclosed plastic container or in bread loaf tin ;) (about 30 minutes to 1 hour)

4. Punch down and shape to your preferred loaf or rolls.

5. Leave to rest for another 20-30 minutes.


6. Preheat oven at 150°C for 10 minutes. Bake bread for 50 minutes or till baked (each oven's temperature differs). My small rolls were baked at 40 minutes, bread loaf was 55 minutes.

Thermomix TM5 how to use

Thermomix TM5 how to use, where to start when you first unbox. What to press first? If you got your Thermomix and yet to know how to use or have been receiving this as a gift, do check my self made video (click here), just some quick guide for you.

This is how you cook with your cookchip.

Make sure you read up your manuals. Here's some slides for your reference.
When you unbox, you will find all these:

And this is how you turn on and off. Do not turn off main plug until you press off or when screen went idle (dark screen) then it's safe to switch off main plug.


You will have a basic cookbook (English or Chinese) which comes with a cookchip, and a manual. Please read up manual, and then study the basic cookbook as pages stated below: 




Please clean you TM bowl for first time use. It's from factory, if you do not have vinegar, it's fine, just wash with detergent. Remove blade only when after big cooking, it is easier to scrub underneath blade with brush when it's removed.



Make sure use of either simmering basket or butterfly with speed not more than 4

The whole TM bowl can submerged into water, in fact it is dishwasher safe but please do wipe drip the contact pins before put on to white housing, the main Thermomix motor.








Please prepare these ingredients for your advisor to guide  you how to make your own Thermomix Chicken Stock. Recipe is in Basic Cookbook and you can use cookchip to do your auto guided cooking.

Thermomix and health

Am loving Thermomix day by day. Call me crazy freak, paranoid or whatever, I just want to share the importance of eating healthy and clean, starts from home, starts now.


You may still be thinking well, it's ok, I have been eating daily, I am still good and strong. You will never know when CANCER strike, not just Cancer.. it could be high blood, high sugar diabetes, high cholesterol, cough, flu, fever.

We are what we eat. Some may still disagree to this, and most of the times realising it only when it is too late, can be really really sad and devastating.

I myself, I never consider myself a healthy person to begin with. I love junk food, I still do. I love instant noodles, over the past 5 years though, I must have say, I did very well, I think throughout 5 years, I can be quite sure I have not have more than 10 packets, somewhere 5-9 packets, didn't really count. I do like to have it but I control, I would always tell myself, I can easily cook up any noodles from dried noodles I have in pantry. At least I can avoid the MSG packed sachet, not knowing if the noodles are still the same with wax, not easily digestible though??

Anyway, my story begins when my buddy Jasmine was diagnosed with Sarcoma Cancer stage 3 at the young age of 34. I was still a party goer, drink quite excessively, eating lots of junks, I can have a bag or 2 bags of chips for a meal, sometimes a bag of 275g corn chips nachos for a whole day, not eating fruits, drinking carbonated drinks, eating lots of ready packed food, from cans, from ready packets, even microwave ready food, cook a lot with microwave too back in year 2007 when I was in New Zealand. I am just a total unhealthy freak.

In 2006, I was suspected colon cancer and was immediately referred to hospital for a scan as I was having a 3 weeks constipation! YES! THREE WEEKS of food intake with nothing comes out!!
I was like this for my whole childhood.. Not 3 weeks, but like once a week or at most twice a week output and I always thought that was normal. That was sooooooo wrong. I was lucky it was a false alarm, as it was just part of my small intestines that didn't go the right way, it kinda curled up, I wonder if I still have that XRay. I was give some kinda chalk to drink up and looking at a big tv of how the chalk goes down my body through my x-rayed body :)

That scary experience didn't wake me up either, so I perfectly understand how most people still not taking action to their better health cause me neither. Not until Jasmine, my buddy from UPM, we were coursemate and also housemate. She and myself having similar issues in relationship. Our men stray. I chose to give up, he is happily married now, the woman of his life changed him, good for him.

My friend on the other hand married and divorced, we strongly believe her cancer was from stress, from longing for her dearest ex. Whatever it is, we cannot change ones mindset, you can only change if only you want to, not from others. He may had changed, feeling changed, she has not. Not until the days when she died. She said she didn't eat well, not much of vegetables and fruits and water in her diet, yes but stress weighed quite a bit too.

Most cancers  or diseases are caused by 4 main factors:
1. Diet
2. Stress
3. Lifestyle
4. Heredity





Knowing the factors and not doing anything to change, even if you yourself insist not to CHANGE, please do stop poisoning your family, your kids. If you are a wife, cooking at home or mum feeding the family or someone who is in charge of feeding others, please please please take action now. You are either feeding nutritious healthy real food cooked from wholefood or poisoning them with non food GMO, chemical packed, full of preservatives, ready processed food. Make a good choice!

I know I was too paranoid until there isn't any real food to eat anymore and that can mean STRESS! So no, I have re-tuned my mind again, from one of the many Cancer books I have read, says that we should not refrain from eating the bad food the junk food, if that's what you like, just eat it, but in lesser amount, much lesser. Abstaining from it, not getting your cravings filled can mean STRESS and we all know stress is NO#1 KILLER! So, yeah, let's just eat it :) Find the balance, eat the right food.

Eating healthy doesn't have to mean expensive. You may be spending a lot in getting all organic food but do you know if you are cooking them wrongly, you may have lost most of the most needed nutrients and vitamins, not only that, and you even create acrylamide! Acrylamide formed in some foods by high cooking temperatures, Foods in which acrylamide develops when cooked at above 120°C include potato chips, french fries, bread and processed cereals. This make me feel guilty when I eat my favourite McD's french fries, that too, I guessed, not more than 10 times, possibly less than 5 times for the past 5 years. I deserved a good pat on my back.

Cooking above 120°C, is considered high temperature, even oil, any oil, the good first cold press olive oil smoke point is at 129°C, anything more will turn oil to toxic. This is why I swear hard on Thermomix because of the low temperature cooking, totally healthy.


I love myself more, my body more, my family even more now, if you too have been there seeing someone dying from disease since beginning as a healthy person being diagnosed up til deathbed to seeing with your own eyes at mortuary, your friend being pulled out from fridge door in the black zipped up bag, unzipped to reveal your friend cold, hard, lifeless. That snapshot scene remains forever in my mind. Life can be so crazy short and unpredictable.


Ok, I am still eating a lot of noodles which I need to reduce, lots of soy sauce too. The rest, I think I have reduced well, very well. For cancer patients especially, whether or not to cut out meat, the most important thing to cut out is sugar. Which includes simple carbohydrates like grains. Grains like rice, oats, wheat, plain flour, bread, cakes, pasta, noodles, etc. All these will turn to glucose which feed cancer cells. Ketchup and mineral water especially, is scary, especially after seeing pH demos from Kangen water reps. I have seen a few and recent read about Alkaline water put me off too. Everything has to be done in moderation, alkaline water may be good to be used or taken as like extra supplements (not supporting supplements in pill forms though) yet not to 100% replace all water intake with it. I was sold too of the idea, until I read the recent sharings in social media, then I kinda taken back a bit. Check my sharings here about overdoing with alkaline water.


Yes, we are what we eat, even heredity, inheritance diseases genetic is mostly how are parents eat is how our grandparents eat and that is how we eat passing on to how our kids eat. Makes any sense? Eating very salty, of food is cooked with lots of MSG, we get to our acquired taste, we always long for mother's cooking, grandmother's cooking. We tend to want to copy their cooking too. If it's good healthy cooking, I'll say why not. My dad's side of family, grandfather died of cancer in his 40s I think and wife, my grandmother died of cancer too at 70 earlier stage was gallstones, I have accompanied her during my teens in hospital. Mum's side of family, grandpa died of high blood pressure, tuberculosis (TB), granny died of diabetes, part of her leg's toes was chopped off (I was in hospital with her too). Dad is diabetes patient, high blood pressure, mum is having thyroid, sister is having gallbladder stones. With family full of diseases, I definitely need to change, if not now, WHEN? I don't exercise though, eventhough it's 10% of healthy lifestyle, I definitely need it.

Past weeks, I received news of 2 friends having faced with cancer stage 4. It was a sudden news. It makes my mind wander too much hence the need to write this. First of all, remembering my girlfriend Jasmine, who fought a good fight, whom made me change my lifestyle, my eating habits. Really being very thankful to her and because of her, I am sharing with others the need to eat healthier starts from home.

Back in 2011, where I was in and out hospital with her, I read every articles I can find in the hospitals while waiting for her, sometimes it will be a whole day sometimes I just admit her, spend a bit of time, off home to cook and then return, to and fro, then going back to my family and at the same time my uncle had some mishap with blood clot in his brain needing surgery, he was in and out ICU twice while myself struggling with Jasmine who is quarantined after first cycle of chemo, it was crazy stress that time, I remember I cried my lungs out, I lost myself, I was in total depression just for about an hour or 2. Not long but enough to kill me. I went crazy! Lots of voices in my head. I definitely do not want anyone to go through what I went through if I am falling sick.

 In hospital I remember seeing some poster about angiogenesis inhibitors, it was something like below pictures. In layman term, the cancer cells feeding itself and grow bigger from feeding tubes, in order to fight cancer/ tumor, those cells have to stop growing or grow smaller. The way to do that is to stop feeding the cell but cutting off the capillaries, the feeding tubes, the angiogenesis. One of it is to stop eating sugar. Everyone going sugarless will at one point, the transition period where the body is fighting because of low sugar level, or perhaps it was the signal sent out by cancer cells crying for help because they are starving. It is all possible to starve cancer cells. Some will say no meat as it is acidic, more vegetables and therefore cancer cell will be starved. Not too sure about just changing to alkaline will work, it seems like sugar is main culprit. So removing simple carbs is really important, we can get the balance by having complex carbohydrates which is in vegetables like pumpkin, cauliflower, broccolli or kale. Broccoli has lots of phytochemicals that are powerful antioxidant and anti-cancer compounds. Cooking methods can lose the goodness though. Steaming is best preferred with only 80°C at most, with Thermomix, you can even stir fry at 60°C, after all vegetables can be eaten raw but only thing with raw food is, we need some heat to kill bacteria, normally 40°C and below is considered raw, well, we can eat above raw but not overcooked ;)
Talking about constipation issues I had, I found myself no longer having constipation issue eversince I have my Thermomix. Reasons being Toxicity, not lack of fiber, is the primary cause of constipation. We need to detox first, not overloading with fibres and stuffed yourself up and feel bloated. I shared this with one of my customer, for his dad, unfortunately actions taken were easy and fast consumer way, getting diet plans from companies selling products, protein powder, fibre stuff, what need to be done is to detox. I can only suggest, I did hang around in that house for more than 30 times. I did cook up Sacred Heart Soup. I did try my best. It is up to any individual to want to change themselves, not me. I can only suggest and share. I don't believe in products, anything not food eventhough it was claimed to be made naturally with food, I can't really believe unless it was me extracting it, cooking it, processed it myself, otherwise it's no way you can sell me through. Only unless it was a fake whole food, real food made by China that I probably can't argue with.



This is all about cancer I am reading this few days, yes it is bothering me.
Read up from doctor who didn't like medicine either. She survived from stage 4 lung cancer.

For now, I am praying for my 2 friends:
To 2 friends who is fighting now at stage 4, we all know you can do it! The key is with you, don't give up. Be the walking miracles.

To the sis who is 5 months pregnant with lung cancer stage 4, 70% lung affected, immobilised is temporary, be stronger than the cancer cells it's alien cells, kick them off your system, you can do it! Fight for yourself, fight for your inborn baby, fight for your loved ones.

*just received an update today evening.... she's under coma, baby need to be out and delivered naturally while in coma but baby didn't make it, her kidney is giving way too. Oh God, please help her, please let her be stronger.

To our sweet lovely friend, you are not alone, you are very much loved many cared and visited. Whichever options you are going for, you know we will support you, time is tough, too much information overloaded, never be afraid to shout out for help. Stage 4 breast cancer.
